Ingredients:

  • 1 pound (450g) fresh okra, washed and cut into 1/2-inch rounds
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (30g) yellow cornmeal
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons milk
  • 2 tablespoons olive oil or avocado oil spray

Instructions:

  1. Wash and dry the okra thoroughly. Trim the stems and cut the okra into ½-inch rounds.
  2. In a medium bowl, combine the flour, cornmeal, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Whisk to combine.
  3. In a separate medium bowl, whisk together the egg and milk.
  4. Dip the okra rounds into the wet mixture, ensuring they are well coated.
  5. Transfer the okra from the wet mixture to the dry mixture, pressing gently to coat evenly. Shake off any excess coating.
  6. Spray the air fryer basket with oil. Arrange the coated okra in a single layer in the air fryer basket. Be careful not to overcrowd; work in batches if needed.
  7. Spray the okra lightly with more oil. Air fry at 400°F (200°C) for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove the okra from the air fryer and serve immediately.
