Ingredients:
- 1 pound (450g) fresh okra, washed and cut into 1/2-inch rounds
- 1/2 cup (60g) all-purpose flour
- 1/4 cup (30g) yellow cornmeal
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons milk
- 2 tablespoons olive oil or avocado oil spray
Instructions:
- Wash and dry the okra thoroughly. Trim the stems and cut the okra into ½-inch rounds.
- In a medium bowl, combine the flour, cornmeal, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Whisk to combine.
- In a separate medium bowl, whisk together the egg and milk.
- Dip the okra rounds into the wet mixture, ensuring they are well coated.
- Transfer the okra from the wet mixture to the dry mixture, pressing gently to coat evenly. Shake off any excess coating.
- Spray the air fryer basket with oil. Arrange the coated okra in a single layer in the air fryer basket. Be careful not to overcrowd; work in batches if needed.
- Spray the okra lightly with more oil. Air fry at 400°F (200°C) for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Remove the okra from the air fryer and serve immediately.
