Ingredients:
- 1 tablespoon vegetable oil (15ml)
- 1 pound ground pork (450g)
- 1 medium yellow onion, finely diced (approx. 1 cup) (150g)
- 2 cloves garlic, minced (approx. 1 teaspoon)
- 1 inch ginger, grated (approx. 1 tablespoon)
- 1 cup shredded green cabbage (85g)
- 1 cup shredded carrots (85g)
- 1/4 cup chopped green onions (30g)
- 2 tablespoons soy sauce (30ml)
- 1 tablespoon rice vinegar (15ml)
- 1 tablespoon sesame oil (15ml)
- 1 teaspoon granulated sugar (4g)
- 1/2 teaspoon ground black pepper (2g)
- 1/4 teaspoon red pepper flakes (optional) (1g)
- 12 egg roll wrappers
- 1 large egg, beaten
- Cooking spray (vegetable or canola oil)
Instructions:
- Heat oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add diced onion, minced garlic, and grated ginger to the skillet. Sauté until fragrant and softened, about 3-5 minutes.
- Stir in shredded cabbage, carrots, and green onions. Add soy sauce, rice vinegar, sesame oil, sugar, black pepper, and red pepper flakes (if using). Cook until cabbage is slightly wilted, about 2-3 minutes.
- Remove from heat and let the filling cool completely (about 15 minutes). This is crucial to prevent soggy egg rolls.
- Place an egg roll wrapper on a clean, flat surface. Spoon about 1/4 cup of the cooled filling in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, tucking it in tightly. Fold in the left and right sides of the wrapper. Brush the top corner with egg wash. Roll the egg roll tightly to seal.
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the air fryer basket with cooking spray. Place egg rolls in a single layer in the air fryer basket, being careful not to overcrowd. Spray the tops of the egg rolls with cooking spray.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy. Adjust cooking time as needed depending on your air fryer.
- Remove egg rolls from the air fryer and serve immediately with your favorite dipping sauce.
