Ingredients:
- 1 lb fresh Atlantic salmon fillet, skin removed, cut into 1-inch cubes
- 1 tbsp avocado oil
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey
- 1 tsp grated fresh ginger
Instructions:
- Pat the 1 lb salmon fillet completely bone dry with paper towels. Note: Surface moisture is the enemy of a shatter crisp crust.
- Slice the salmon into uniform 1 inch (2.5 cm) cubes, removing any remaining pin bones.
- In a large bowl, whisk together the 1 tbsp avocado oil, 2 tbsp soy sauce, 1 tbsp honey, and 1 tsp grated ginger.
- Add the salmon cubes to the wet marinade and toss gently to coat every surface.
- Sprinkle the 1 tbsp cornstarch, 1 tsp garlic powder, 1/2 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp pepper over the fish.
- Toss again until the white powder disappears and forms a thick, tacky paste around the fish.
- Preheat your air fryer to 200°C for 3 minutes. Note: A cold basket leads to sticking.
- Arrange the bites in a single layer, ensuring they do not touch.
- Air fry for 8 minutes total, shaking the basket halfway through until the edges are charred and the centers feel firm.
- Remove immediately and let rest for 2 minutes to allow the residual heat to finish the very center.
