Ingredients:

  • 2 lbs Russet potatoes, peeled
  • 1 large yellow onion, finely grated
  • 1 tbsp lemon juice
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp baking powder
  • 3 tbsp high-heat oil for frying

Instructions:

  1. Grate potatoes and onion. Use the large holes of a box grater for the 2 lbs Russet potatoes and the fine holes for the 1 large yellow onion. Note: Grating the onion finely allows it to distribute evenly and caramelize faster.
  2. Add lemon juice. Toss the shreds immediately with 1 tbsp lemon juice in a large bowl. Note: This stops the potatoes from reacting with the air and turning brown.
  3. Wring out liquid. Transfer the mixture to a cheesecloth and twist with all your might. Note: You want the shreds to feel like dry wood shavings.
  4. Reclaim the starch. Let the squeezed liquid sit in a bowl for 2 minutes, then carefully pour off the water. Add the white sludge (starch) at the bottom back to the dry potatoes.
  5. Whisk the binder. In a separate small bowl, combine 2 large eggs, 1 tsp sea salt, 1/2 tsp black pepper, and 1/2 tsp baking powder.
  6. Fold the batter. Mix the egg mixture into the dry potatoes, then sprinkle in 1/4 cup all purpose flour. Note: Mix just until the flour disappears to prevent developing too much gluten.
  7. Heat the skillet. Pour 3 tbsp over high heat oil into your cast iron skillet and heat to 350°F (175°C). Watch for the oil to shimmer and dance.
  8. Fry the pancakes. Drop 1/4 cup portions of batter into the pan and flatten with a spatula. Cook for 3-4 minutes until the edges are lacy and mahogany.
  9. Flip and finish. Flip carefully and fry for another 3 minutes until the exterior is a deep, uniform gold.
  10. Drain on a rack. Transfer the finished pancakes to a wire cooling rack set over a baking sheet. Note: Air circulation prevents the bottom from steaming and losing its crunch.
