Ingredients:

  • 2 ½ cups (312g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (113g) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup (50g) cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons milk
  • Edible black and green gel food coloring
  • Edible eyes (optional)
  • Chocolate sprinkles (optional)

Instructions:

  1. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. Gradually incorporate the dry ingredients into the wet mixture until a dough forms.
  5. Shape the dough into a disc, wrap it in plastic wrap, and chill for 30 minutes.
  6. Preheat your oven to 350°F (175°C) during the last few minutes of chilling.
  7. On a floured surface, roll out the chilled dough to about ¼ inch thickness.
  8. Use cookie cutters to cut out beetle shapes and place them on a parchment-lined baking sheet.
  9. Bake cookies for 12-15 minutes or until edges are firm. Remove from the oven and let cool on a wire rack.
  10. In a bowl, combine powdered sugar, milk, and a few drops of food coloring to create a dark icing.
  11. Use a piping bag or a zip-top bag with the corner snipped to decorate cookies. Add edible eyes and chocolate sprinkles as desired.
