Ingredients:
- 2 ½ cups (312g) all-purpose flour
- 1 cup (200g) granulated sugar
- ½ cup (113g) unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup (50g) cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup (120g) powdered sugar
- 2-3 tablespoons milk
- Edible black and green gel food coloring
- Edible eyes (optional)
- Chocolate sprinkles (optional)
Instructions:
- In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gradually incorporate the dry ingredients into the wet mixture until a dough forms.
- Shape the dough into a disc, wrap it in plastic wrap, and chill for 30 minutes.
- Preheat your oven to 350°F (175°C) during the last few minutes of chilling.
- On a floured surface, roll out the chilled dough to about ¼ inch thickness.
- Use cookie cutters to cut out beetle shapes and place them on a parchment-lined baking sheet.
- Bake cookies for 12-15 minutes or until edges are firm. Remove from the oven and let cool on a wire rack.
- In a bowl, combine powdered sugar, milk, and a few drops of food coloring to create a dark icing.
- Use a piping bag or a zip-top bag with the corner snipped to decorate cookies. Add edible eyes and chocolate sprinkles as desired.
