Ingredients:
- 4 cod fillets (approximately 6 ounces each, or 170 g)
- 2 tablespoons olive oil (30 ml)
- Salt, to taste
- Black pepper, to taste
- Zest of 1 lemon
- 3 tablespoons fresh parsley, chopped (15 g)
- 1 tablespoon fresh dill, chopped (5 g)
- 1 tablespoon fresh chives, chopped (5 g)
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs (30 g)
- 2 tablespoons unsalted butter, melted (30 g)
Instructions:
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper for easy cleanup.
- Pat cod fillets dry with paper towels. Drizzle with olive oil and season with salt and pepper on both sides.
- In a mixing bowl, combine lemon zest, chopped parsley, dill, chives, minced garlic, breadcrumbs, and melted butter. Mix until well combined.
- Place the cod fillets on the prepared baking sheet. Generously spoon the lemon herb topping over each fillet, pressing gently to adhere.
- Bake in the preheated oven for 15-20 minutes until the cod flakes easily with a fork and is cooked through (internal temperature should be 145°F or 63°C).
- Remove from oven, let cool for a few minutes, then serve warm.
