Ingredients:

  • 4 cod fillets (approximately 6 ounces each, or 170 g)
  • 2 tablespoons olive oil (30 ml)
  • Salt, to taste
  • Black pepper, to taste
  • Zest of 1 lemon
  • 3 tablespoons fresh parsley, chopped (15 g)
  • 1 tablespoon fresh dill, chopped (5 g)
  • 1 tablespoon fresh chives, chopped (5 g)
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs (30 g)
  • 2 tablespoons unsalted butter, melted (30 g)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. Pat cod fillets dry with paper towels. Drizzle with olive oil and season with salt and pepper on both sides.
  4. In a mixing bowl, combine lemon zest, chopped parsley, dill, chives, minced garlic, breadcrumbs, and melted butter. Mix until well combined.
  5. Place the cod fillets on the prepared baking sheet. Generously spoon the lemon herb topping over each fillet, pressing gently to adhere.
  6. Bake in the preheated oven for 15-20 minutes until the cod flakes easily with a fork and is cooked through (internal temperature should be 145°F or 63°C).
  7. Remove from oven, let cool for a few minutes, then serve warm.
