Ingredients:

  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup diced bell peppers
  • 1 cup diced onion
  • 1 cup shredded cheddar cheese
  • 1 cup diced cooked ham or cooked sausage
  • 2 tablespoons chopped fresh parsley or chives (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Sauté the diced onions and bell peppers in a skillet over medium heat until softened, about 5 minutes.
  4. Optionally, add the cooked ham or sausage to the skillet until heated through.
  5. Add the sautéed mixture to the egg mixture and stir to combine.
  6. Pour the mixture into the greased baking dish.
  7. Sprinkle the shredded cheese evenly over the top.
  8. Bake in the preheated oven for 30 minutes or until the center is set and lightly golden.
  9. Remove from the oven and let it cool for 5 minutes before slicing.
  10. Garnish with chopped parsley or chives if desired.
