Ingredients:
- 1 ¼ cups all-purpose flour (150 g)
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed (115 g)
- 3 tablespoons ice water (45 ml)
- 2 cups fresh goumi berries (300 g)
- ¾ cup granulated sugar (150 g)
- 2 tablespoons cornstarch (16 g)
- 1 tablespoon lemon juice (15 ml)
- ½ teaspoon vanilla extract
- ½ teaspoon ground cinnamon
Instructions:
- In a mixing bowl, combine flour and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in ice water until dough forms. Wrap in plastic and chill for 10 minutes.
- In another bowl, mix goumi berries, sugar, cornstarch, lemon juice, vanilla, and cinnamon. Let sit for 5 minutes to macerate.
- Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit the pie dish.
- Place the rolled dough into the pie dish and trim excess. Pour in the goumi berry filling evenly.
- Cover the pie with a lattice crust or full top crust, if desired. Bake for 30-35 minutes or until the crust is golden brown and filling bubbles.
- Allow to cool for at least 10 minutes before serving.
