Ingredients:

  • 1 ¼ cups all-purpose flour (150 g)
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed (115 g)
  • 3 tablespoons ice water (45 ml)
  • 2 cups fresh goumi berries (300 g)
  • ¾ cup granulated sugar (150 g)
  • 2 tablespoons cornstarch (16 g)
  • 1 tablespoon lemon juice (15 ml)
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in ice water until dough forms. Wrap in plastic and chill for 10 minutes.
  4. In another bowl, mix goumi berries, sugar, cornstarch, lemon juice, vanilla, and cinnamon. Let sit for 5 minutes to macerate.
  5. Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit the pie dish.
  6. Place the rolled dough into the pie dish and trim excess. Pour in the goumi berry filling evenly.
  7. Cover the pie with a lattice crust or full top crust, if desired. Bake for 30-35 minutes or until the crust is golden brown and filling bubbles.
  8. Allow to cool for at least 10 minutes before serving.
