- 1 cup unsalted butter, chilled and diced

- 4-6 tablespoons iced water
- 2 cups fresh Goumi berries, pitted
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
- In a mixing bowl, combine flour, sugar, and salt.
- Cut in butter until the mixture resembles coarse crumbs.
- Gradually add iced water, one tablespoon at a time, mixing until dough forms.
- Split the dough in half, shape into discs, wrap in plastic, and chill for 30 minutes.
- In a saucepan, combine Goumi berries, sugar, cornstarch, lemon juice, vanilla extract, and salt.
- Cook over medium heat, gently stirring, until bubbling and slightly thickened (about 5-7 minutes).
- Remove from heat and let cool slightly.
- Preheat the oven to 375°F (190°C).
- Roll out one disc of dough and place it into the pie dish.
- Pour the Goumi berry filling into the crust.
- Roll out the second disc of dough and cut into lattice strips or cover the pie entirely.
- Seal the edges and cut slits in the top for steam to escape.
- Place the pie on a baking sheet to catch drips.
- Bake for 45 minutes or until the crust is golden brown and filling is bubbly.
- Let cool for at least 30 minutes before serving.
