Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, chilled and diced
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 4-6 tablespoons iced water
  • 2 cups fresh Goumi berries, pitted
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Cut in butter until the mixture resembles coarse crumbs.
  3. Gradually add iced water, one tablespoon at a time, mixing until dough forms.
  4. Split the dough in half, shape into discs, wrap in plastic, and chill for 30 minutes.
  5. In a saucepan, combine Goumi berries, sugar, cornstarch, lemon juice, vanilla extract, and salt.
  6. Cook over medium heat, gently stirring, until bubbling and slightly thickened (about 5-7 minutes).
  7. Remove from heat and let cool slightly.
  8. Preheat the oven to 375°F (190°C).
  9. Roll out one disc of dough and place it into the pie dish.
  10. Pour the Goumi berry filling into the crust.
  11. Roll out the second disc of dough and cut into lattice strips or cover the pie entirely.
  12. Seal the edges and cut slits in the top for steam to escape.
  13. Place the pie on a baking sheet to catch drips.
  14. Bake for 45 minutes or until the crust is golden brown and filling is bubbly.
  15. Let cool for at least 30 minutes before serving.
