  • 3/4 cup (150g) granulated sugar
  • 1/3 cup (80ml) vegetable oil or melted coconut oil
  • 2 large eggs

  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (60ml) heavy cream
  • 2 cups (240g) powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: Fresh berries for garnish

  1. Preheat Oven: Set the oven to 350°F (175°C).
  2. Prepare Pan: Grease and flour a 9x13-inch baking pan or line it with parchment paper.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Mix Wet Ingredients: In another bowl, combine kefir, sugar, oil, eggs, and vanilla. Whisk until smooth.
  5. Combine Ingredients: Gradually add dry mixture to wet mixture, folding gently until just combined; do not overmix.
  6. Bake the Cake: Pour the batter into the prepared pan and smooth the top. Bake for 30 minutes, or until a toothpick inserted comes out clean.
  7. Cool the Cake: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  9. Frost the Cake: Once the cake is cooled, spread the frosting evenly on top. Garnish with fresh berries if desired.
  10. Serve: Slice and enjoy!
