Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (240ml) plain kefir
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup (120g) powdered sugar (for optional glaze)
  • 2-3 tbsp milk or kefir (for optional glaze)
  • 1 tsp vanilla extract (for optional glaze)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line the baking pan with parchment paper.
  3. In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Blend in the kefir and vanilla extract until smooth.
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  8. Pour the batter into the prepared baking pan, smoothing the top.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Optional: Whisk together glaze ingredients and drizzle over the cooled cake.
