Ingredients:
- 2 cups (240g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (240ml) plain kefir
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup (120g) powdered sugar (for optional glaze)
- 2-3 tbsp milk or kefir (for optional glaze)
- 1 tsp vanilla extract (for optional glaze)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease and line the baking pan with parchment paper.
- In a large mixing bowl, cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Blend in the kefir and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared baking pan, smoothing the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Optional: Whisk together glaze ingredients and drizzle over the cooled cake.
