Ingredients:

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • ¼ teaspoon salt
  • 3 tablespoons cold water
  • 1 cup light corn syrup
  • ¾ cup brown sugar, packed
  • 3 large eggs
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 ½ cups pecans, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine melted butter, flour, sugar, and salt.
  3. Mix until crumbs form, then add cold water gradually until the dough comes together.
  4. Divide the dough evenly into the jars.
  5. Press the dough into the bottoms and up the sides of each jar to form a crust.
  6. Chill the jars in the freezer for 10 minutes while preparing the filling.
  7. In another bowl, whisk together corn syrup, brown sugar, eggs, melted butter, and vanilla.
  8. Fold in the chopped pecans.
  9. Pour the filling evenly into each jar over the crusts.
  10. Place the jars on a baking sheet and bake for 20-25 minutes until the filling is set and bubbly.
  11. Cool the jars on a wire rack for 15 minutes before serving.
