Ingredients:
- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- ¼ teaspoon salt
- 3 tablespoons cold water
- 1 cup light corn syrup
- ¾ cup brown sugar, packed
- 3 large eggs
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 ½ cups pecans, chopped
Instructions:
- Preheat the oven to 350°F (175°C).
- In a bowl, combine melted butter, flour, sugar, and salt.
- Mix until crumbs form, then add cold water gradually until the dough comes together.
- Divide the dough evenly into the jars.
- Press the dough into the bottoms and up the sides of each jar to form a crust.
- Chill the jars in the freezer for 10 minutes while preparing the filling.
- In another bowl, whisk together corn syrup, brown sugar, eggs, melted butter, and vanilla.
- Fold in the chopped pecans.
- Pour the filling evenly into each jar over the crusts.
- Place the jars on a baking sheet and bake for 20-25 minutes until the filling is set and bubbly.
- Cool the jars on a wire rack for 15 minutes before serving.
