  • 2 cups (240g) Auguson Farms Bread Mix
  • 1/3 cup (75g) granulated sugar
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 2 large eggs
  • 1/2 cup (120ml) whole milk
  • 1 tablespoon baking powder (if not included in bread mix)
  • 1 teaspoon vanilla extract (optional)
  • 1 cup (150g) dried fruit (raisins, cranberries) or chocolate chips (optional)
  • 1 tablespoon lemon zest (for a citrus flavor, optional)

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together Auguson Farms Bread Mix and granulated sugar.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs (use a pastry cutter or fork).
  4. In a separate bowl, whisk together eggs, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry mixture and stir until just combined. Avoid overmixing.
  6. Gently fold in any optional add-ins if using.
  7. Turn the dough out onto a floured surface and knead gently 2-3 times to bring it together.
  8. Pat the dough into a circle about 1-inch thick and cut into 8 wedges or use a biscuit cutter for a round shape.
  9. Place scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  10. Allow to cool slightly before serving with jam or cream. Enjoy!
