- 2 large eggs
- 1/2 cup (120ml) whole milk
- 1 tablespoon baking powder (if not included in bread mix)
- 1 teaspoon vanilla extract (optional)
- 1 cup (150g) dried fruit (raisins, cranberries) or chocolate chips (optional)
- 1 tablespoon lemon zest (for a citrus flavor, optional)
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together Auguson Farms Bread Mix and granulated sugar.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs (use a pastry cutter or fork).
- In a separate bowl, whisk together eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until just combined. Avoid overmixing.
- Gently fold in any optional add-ins if using.
- Turn the dough out onto a floured surface and knead gently 2-3 times to bring it together.
- Pat the dough into a circle about 1-inch thick and cut into 8 wedges or use a biscuit cutter for a round shape.
- Place scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
- Allow to cool slightly before serving with jam or cream. Enjoy!
