Instructions:
- Preheat oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy (about 2-3 minutes). Add vanilla extract and optional almond extract, mixing until combined.
- In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Gently fold in the finely chopped nuts until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, scoop out portions of the dough and roll into balls (about 1 inch in diameter).
- Line a baking sheet with parchment paper and place the dough balls, spacing them a few inches apart.

- Allow the snowballs to cool for 5 minutes on the baking sheet
