  • 1 tsp ground cinnamon

  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • ½ cup (120ml) unsweetened applesauce
  • ⅓ cup (80ml) vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • Powdered sugar for dusting (optional)
  • Chopped nuts (e.g., walnuts or pecans) for added crunch (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the cake pan and optionally line with parchment paper for easy removal.
  3. In a bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk until well blended.
  4. In a separate bowl, whisk together applesauce, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  5. Gradually add dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving. Dust with powdered sugar if desired.
