- ½ cup (100g) granulated sugar
- ½ cup (100g) brown sugar, packed
- ½ cup (120ml) unsweetened applesauce
- ⅓ cup (80ml) vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 tsp vanilla extract
- Powdered sugar for dusting (optional)
- Chopped nuts (e.g., walnuts or pecans) for added crunch (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the cake pan and optionally line with parchment paper for easy removal.
- In a bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk until well blended.
- In a separate bowl, whisk together applesauce, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Gradually add dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving. Dust with powdered sugar if desired.
