Ingredients:

  • 3 cups rolled oats (240g)
  • 1 cup mixed nuts (e.g., almonds, walnuts) chopped (100g)
  • 1/2 cup honey or maple syrup (120ml)
  • 1/4 cup coconut oil, melted (60ml)
  • 1 teaspoon pure vanilla extract (5ml)
  • 1/2 teaspoon salt (2g)
  • 1/2 teaspoon ground cinnamon (1g)
  • 1/2 cup dried fruits (raisins, cranberries) (75g) - optional

Instructions:

  1. Preheat oven to 325°F (160°C).
  2. In a large mixing bowl, combine rolled oats, chopped nuts, salt, and cinnamon. Mix well.
  3. In a separate bowl, whisk together melted coconut oil, honey/maple syrup, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and mix until evenly coated.
  5. Spread the granola mixture evenly on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes, stirring halfway, until golden brown.
  7. Remove from oven and let cool. Mix in dried fruits if desired.
  8. Store in an airtight container for up to two weeks.
