Ingredients:

  • 4 bone-in, skin-on chicken pieces (thighs or drumsticks recommended), about 6 oz (170g) each
  • 1 tablespoon (15ml) olive oil or vegetable oil
  • Salt and freshly ground black pepper to taste
  • 1 cup (240ml) ketchup
  • 1/4 cup (60ml) apple cider vinegar
  • 1/4 cup (60ml) brown sugar, packed
  • 2 tablespoons (30ml) Worcestershire sauce
  • 1 tablespoon (15ml) smoked paprika
  • 1 teaspoon (5ml) garlic powder
  • 1/2 teaspoon (2.5ml) onion powder
  • 1/4 teaspoon (1.25ml) cayenne pepper (optional, for a little kick)

Instructions:

  1. Pat chicken dry with paper towels. Season generously with salt and pepper.
  2. In a mixing bowl, whisk together ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using).
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken, skin-side down, for 3-4 minutes until lightly browned. This step adds flavour, but can be skipped for a quicker recipe.
  4. Arrange chicken in a baking dish. Pour BBQ sauce evenly over the chicken, ensuring each piece is well coated.
  5. Bake in a preheated oven at 375°F (190°C) for 45-55 minutes, or until the internal temperature reaches 165°F (74°C). Baste with sauce every 15 minutes for extra flavour.
  6. Let the chicken rest for 5-10 minutes before serving.
