Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 medium yellow onion, sliced
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
Instructions:
- Drizzle olive oil into the bottom of the slow cooker. Layer the sliced onions first to create a natural rack for the meat.
- Season the chicken thighs generously with salt and pepper, then place them atop the onions.
- Whisk together the balsamic vinegar, honey, garlic, dried oregano, dried basil, and red pepper flakes in a small bowl.
- Pour the balsamic mixture evenly over the chicken. Cover and cook on Low for 6-8 hours or on High for 3-4 hours until tender.
- Carefully transfer the cooked chicken to a baking sheet and spoon the remaining cooking liquid from the pot over the meat.
- Place under the oven broiler for 3-5 minutes until the glaze bubbles and turns a deep, dark brown.
