Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 medium yellow onion, sliced
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes

Instructions:

  1. Drizzle olive oil into the bottom of the slow cooker. Layer the sliced onions first to create a natural rack for the meat.
  2. Season the chicken thighs generously with salt and pepper, then place them atop the onions.
  3. Whisk together the balsamic vinegar, honey, garlic, dried oregano, dried basil, and red pepper flakes in a small bowl.
  4. Pour the balsamic mixture evenly over the chicken. Cover and cook on Low for 6-8 hours or on High for 3-4 hours until tender.
  5. Carefully transfer the cooked chicken to a baking sheet and spoon the remaining cooking liquid from the pot over the meat.
  6. Place under the oven broiler for 3-5 minutes until the glaze bubbles and turns a deep, dark brown.
