Ingredients:
- 3 tbsp high-quality unsweetened cocoa powder
- 2 tbsp pure maple syrup
- 1 pinch fine sea salt
- 2 cups whole milk
- 2 oz dark chocolate (70% cacao), finely chopped
- 1/2 tsp pure vanilla extract
Instructions:
- In a small heavy-bottomed saucepan, whisk together the cocoa powder, maple syrup, sea salt, and 2 tablespoons of the milk until a smooth, mahogany-colored paste forms.
- Place the saucepan over medium-low heat. Stirring constantly, slowly stream in the remaining milk to incorporate the paste without creating lumps.
- Continue heating until wisps of steam appear, but do not let the liquid reach a boil, as this can scald the milk proteins.
- Add the finely chopped dark chocolate and vanilla extract. Whisk vigorously or use a handheld frother until the chocolate is completely melted and the beverage is emulsified and frothy.
