Ingredients:

  • 3 tbsp high-quality unsweetened cocoa powder
  • 2 tbsp pure maple syrup
  • 1 pinch fine sea salt
  • 2 cups whole milk
  • 2 oz dark chocolate (70% cacao), finely chopped
  • 1/2 tsp pure vanilla extract

Instructions:

  1. In a small heavy-bottomed saucepan, whisk together the cocoa powder, maple syrup, sea salt, and 2 tablespoons of the milk until a smooth, mahogany-colored paste forms.
  2. Place the saucepan over medium-low heat. Stirring constantly, slowly stream in the remaining milk to incorporate the paste without creating lumps.
  3. Continue heating until wisps of steam appear, but do not let the liquid reach a boil, as this can scald the milk proteins.
  4. Add the finely chopped dark chocolate and vanilla extract. Whisk vigorously or use a handheld frother until the chocolate is completely melted and the beverage is emulsified and frothy.
