Ingredients:

  • 1 pound (450g) fresh white fish fillets (e.g., snapper, tilapia), skinless and boneless
  • 1/4 cup (60ml) freshly squeezed lime juice (about 2-3 limes)
  • 1/4 cup (60ml) fish stock or cold water
  • 1 tablespoon (15ml) soy sauce
  • 1 teaspoon (5g) ginger, minced
  • 1 garlic clove, minced
  • 1 small red chili pepper, seeds removed and roughly chopped (or to taste)
  • 1 tablespoon (15g) fresh cilantro, chopped
  • Salt and pepper, to taste
  • Slices of lime (for garnish)
  • Microgreens or additional cilantro (for garnish)

Instructions:

  1. Rinse the fish fillets under cold water and pat dry. Cut the fillets into small chunks for easier blending.
  2. In a blender, combine fish chunks, lime juice, fish stock (or water), soy sauce, ginger, garlic, and chili. Blend on high until smooth but slightly chunky for texture.
  3. Taste the mixture, then season with salt and pepper as needed. Blend again if adjustments are made.
  4. Transfer the mixture to a mixing bowl and refrigerate for 30 minutes to let the flavors meld.
  5. Pour into small serving cups or bowls, garnishing with lime slices and microgreens if desired.
