Ingredients:
- 1 pound (450g) fresh white fish fillets (e.g., snapper, tilapia), skinless and boneless
- 1/4 cup (60ml) freshly squeezed lime juice (about 2-3 limes)
- 1/4 cup (60ml) fish stock or cold water
- 1 tablespoon (15ml) soy sauce
- 1 teaspoon (5g) ginger, minced
- 1 garlic clove, minced
- 1 small red chili pepper, seeds removed and roughly chopped (or to taste)
- 1 tablespoon (15g) fresh cilantro, chopped
- Salt and pepper, to taste
- Slices of lime (for garnish)
- Microgreens or additional cilantro (for garnish)
Instructions:
- Rinse the fish fillets under cold water and pat dry. Cut the fillets into small chunks for easier blending.
- In a blender, combine fish chunks, lime juice, fish stock (or water), soy sauce, ginger, garlic, and chili. Blend on high until smooth but slightly chunky for texture.
- Taste the mixture, then season with salt and pepper as needed. Blend again if adjustments are made.
- Transfer the mixture to a mixing bowl and refrigerate for 30 minutes to let the flavors meld.
- Pour into small serving cups or bowls, garnishing with lime slices and microgreens if desired.
