Ingredients:
- 1 pound tomatillos, husked and rinsed
- 1-2 jalapeños, stems removed
- 1/2 cup fresh cilantro, loosely packed
- 1/4 cup fresh lime juice (about 2 limes)
- 1 small white onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (optional)
Instructions:
- Husk the tomatillos and rinse them under cold water.
- Preheat oven to 425°F (220°C) and place tomatillos and jalapeños on a baking sheet.
- Roast for 10 minutes, until skins are blistered and tomatillos are soft.
- In a blender or food processor, combine roasted tomatillos, jalapeños, cilantro, lime juice, onion, and garlic.
- Pulse until smooth or your desired consistency is reached.
- Add salt and pepper to taste and blend briefly to combine.
- If too thick, add a little water or lime juice and adjust seasoning as needed.
- Transfer to a serving bowl and enjoy with chips or as a condiment for your favorite dishes.
