Ingredients:

  • 1 pound tomatillos, husked and rinsed
  • 1-2 jalapeños, stems removed
  • 1/2 cup fresh cilantro, loosely packed
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 small white onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (optional)

Instructions:

  1. Husk the tomatillos and rinse them under cold water.
  2. Preheat oven to 425°F (220°C) and place tomatillos and jalapeños on a baking sheet.
  3. Roast for 10 minutes, until skins are blistered and tomatillos are soft.
  4. In a blender or food processor, combine roasted tomatillos, jalapeños, cilantro, lime juice, onion, and garlic.
  5. Pulse until smooth or your desired consistency is reached.
  6. Add salt and pepper to taste and blend briefly to combine.
  7. If too thick, add a little water or lime juice and adjust seasoning as needed.
  8. Transfer to a serving bowl and enjoy with chips or as a condiment for your favorite dishes.
