Ingredients:

  • 3 cups (450g) shredded rotisserie chicken
  • 1/2 cup (120ml) buffalo wing sauce
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (60ml) ranch dressing
  • 1/2 tsp (1.5g) garlic powder
  • 1 package (12 count) Hawaiian sweet rolls
  • 1 1/2 cups (170g) shredded mozzarella cheese
  • 2 tbsp (30g) unsalted butter, melted
  • 1 tsp (3g) garlic powder
  • 1 tbsp (8g) fresh chives, minced

Instructions:

  1. In a large mixing bowl, combine the shredded rotisserie chicken, buffalo sauce, softened cream cheese, ranch dressing, and garlic powder. Fold with a spatula until the chicken is fully coated and the cream cheese is completely incorporated.
  2. Preheat the oven to 350°F (175°C).
  3. Using a serrated knife, slice the entire slab of Hawaiian rolls in half horizontally without separating the individual rolls.
  4. Place the bottom half of the rolls in a 9x13 inch baking dish.
  5. Spread a layer of shredded mozzarella across the bottom buns, then evenly pile the buffalo chicken mixture on top of the cheese.
  6. Top the chicken with the remaining mozzarella and place the top bun slab back on.
  7. Whisk the melted butter with 1 tsp garlic powder and brush the mixture liberally over the top of the rolls.
  8. Bake for 20 minutes, or until the cheese is bubbling and the tops are golden brown.
  9. Remove from the oven and garnish with minced chives.
