Ingredients:

  • 1 sheet (12 oz) refrigerated pie crust
  • 1 tbsp melted butter
  • 1 tbsp coarse sugar
  • 1 cup pitted cherries, halved
  • 2 tbsp maple syrup
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1/4 tsp cinnamon
  • 2 oz softened cream cheese
  • 1 tbsp Greek yogurt
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat your oven to 400°F (200°C) and lightly grease a standard 12-cup muffin tin.
  2. Roll out the chilled pie crust and use a 2-inch cutter to create 12 circles.
  3. Gently press each circle into the bottom and up the sides of the muffin cups, ensuring there are no gaps.
  4. Mix softened cream cheese, Greek yogurt, and vanilla extract; dollop one teaspoon into the bottom of each crust.
  5. Combine cherries, maple syrup, lemon juice, cornstarch, and cinnamon; spoon the mixture evenly over the cream cheese base, leaving 1/4 inch of space from the top.
  6. Brush the exposed edges of the dough with melted butter and sprinkle with coarse sugar.
  7. Bake for 12–14 minutes until edges are a deep mahogany gold and the filling is bubbling.
  8. Let the bites cool in the pan for 5 minutes before transferring to a wire rack.
