Ingredients:
- 1 sheet (12 oz) refrigerated pie crust
- 1 tbsp melted butter
- 1 tbsp coarse sugar
- 1 cup pitted cherries, halved
- 2 tbsp maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch
- 1/4 tsp cinnamon
- 2 oz softened cream cheese
- 1 tbsp Greek yogurt
- 1/2 tsp vanilla extract
Instructions:
- Preheat your oven to 400°F (200°C) and lightly grease a standard 12-cup muffin tin.
- Roll out the chilled pie crust and use a 2-inch cutter to create 12 circles.
- Gently press each circle into the bottom and up the sides of the muffin cups, ensuring there are no gaps.
- Mix softened cream cheese, Greek yogurt, and vanilla extract; dollop one teaspoon into the bottom of each crust.
- Combine cherries, maple syrup, lemon juice, cornstarch, and cinnamon; spoon the mixture evenly over the cream cheese base, leaving 1/4 inch of space from the top.
- Brush the exposed edges of the dough with melted butter and sprinkle with coarse sugar.
- Bake for 12–14 minutes until edges are a deep mahogany gold and the filling is bubbling.
- Let the bites cool in the pan for 5 minutes before transferring to a wire rack.
