Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) packed brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups (240g) rolled oats
- 1 cup (150g) chocolate chips or dried fruit (optional)
- 1 cup (100g) chopped nuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the rolled oats and any optional add-ins until evenly distributed.
- Drop rounded tablespoons of dough onto lined baking sheets, spacing them at least 2 inches apart.
- Bake for 12-15 minutes or until golden brown around the edges.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
