Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) packed brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups (240g) rolled oats
  • 1 cup (150g) chocolate chips or dried fruit (optional)
  • 1 cup (100g) chopped nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the rolled oats and any optional add-ins until evenly distributed.
  7. Drop rounded tablespoons of dough onto lined baking sheets, spacing them at least 2 inches apart.
  8. Bake for 12-15 minutes or until golden brown around the edges.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
