Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz / 170g each)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon Italian seasoning (5 ml)
- 1/2 teaspoon garlic powder (2.5 ml)
- 1/4 teaspoon salt (1.25 ml)
- 1/4 teaspoon black pepper (1.25 ml)
- 8 ounces fresh mozzarella cheese, sliced (225g)
- 2 large ripe tomatoes, sliced
- 1/4 cup fresh basil leaves, roughly chopped (loosely packed)
- 1/4 cup balsamic glaze (good quality, ready-made is fine) (60 ml)
Instructions:
- Pound chicken breasts to an even thickness (about ½ inch). This ensures even cooking.
- In a small bowl, combine olive oil, Italian seasoning, garlic powder, salt, and pepper. Brush the mixture over both sides of the chicken breasts.
- Heat the skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Top each cooked chicken breast with slices of mozzarella and tomato.
- Cover the skillet and cook for another 2-3 minutes, or until the mozzarella is melted and gooey.
- Remove from heat. Sprinkle with fresh basil and drizzle generously with balsamic glaze. Serve immediately.
