Ingredients:
- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 medium Granny Smith apples, cored and diced
- 2 medium Red Delicious apples, cored and diced
- 2 stalks celery, thinly sliced
- 1/2 cup walnuts, toasted and chopped
- 1/4 cup dried cranberries (optional)
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt or sour cream
- 1 tbsp lemon juice, freshly squeezed
- 1 tbsp honey or maple syrup
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions:
- Heat oil in skillet. Season chicken with salt and pepper. Cook until internal temperature reaches 165°F (74°C). Let cool completely, then dice into bite-sized pieces.
- Dice apples and celery. Chop walnuts and parsley.
- Whisk together mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper in a small bowl. Taste and adjust seasonings.
- In a large mixing bowl, combine diced chicken, apples, celery, walnuts, cranberries (if using), and parsley.
- Pour dressing over the salad and gently toss to coat.
- Refrigerate for at least 30 minutes for flavors to meld.
- Spoon salad onto plates or into bowls.
