Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 medium Granny Smith apples, cored and diced
  • 2 medium Red Delicious apples, cored and diced
  • 2 stalks celery, thinly sliced
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup dried cranberries (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt or sour cream
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tbsp honey or maple syrup
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions:

  1. Heat oil in skillet. Season chicken with salt and pepper. Cook until internal temperature reaches 165°F (74°C). Let cool completely, then dice into bite-sized pieces.
  2. Dice apples and celery. Chop walnuts and parsley.
  3. Whisk together mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper in a small bowl. Taste and adjust seasonings.
  4. In a large mixing bowl, combine diced chicken, apples, celery, walnuts, cranberries (if using), and parsley.
  5. Pour dressing over the salad and gently toss to coat.
  6. Refrigerate for at least 30 minutes for flavors to meld.
  7. Spoon salad onto plates or into bowls.
