Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • ½ cup (100g) granulated sugar
  • ½ cup (113g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup (240ml) heavy whipping cream

Instructions:

  1. In a bowl, combine graham cracker crumbs and granulated sugar. Stir in melted butter until mixture resembles wet sand. Press the mixture evenly into the bottom of the springform pan. Chill while preparing the filling.
  2. In a mixing bowl, beat softened cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon juice; mix until well combined. In a separate bowl, whip heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  3. Pour the filling over the chilled crust, smoothing the top with a spatula. Cover and refrigerate for at least 2 hours or until firm.
  4. Carefully remove the sides of the springform pan. Slice and serve chilled, optionally garnished with fresh fruit or whipped cream.
