Ingredients:

  • 1 lb Bulk Pork Sausage (Mild or Hot)
  • 1/2 cup Red Bell Pepper, diced
  • 1/2 cup Green Bell Pepper, diced
  • 1/2 cup Yellow Onion, finely chopped
  • 8 cups Cubed French or Italian Bread (1-inch pieces)
  • 8 Large Eggs
  • 2 1/2 cups Whole Milk
  • 1/2 cup Heavy Cream
  • 1 tsp Dry Mustard Powder
  • 1 tsp Kosher Salt
  • 1/2 tsp Freshly Cracked Black Pepper
  • 2 cups Sharp Cheddar Cheese, shredded
  • 1/4 cup Fresh Chives or Green Onions, sliced

Instructions:

  1. In a large skillet over medium-high heat, cook the bulk sausage, breaking it into small crumbles. Add the diced onions and peppers during the last 4 minutes of cooking until softened. Drain excess grease.
  2. Grease a 9x13 inch baking dish. Spread the bread cubes evenly across the bottom, then top with the cooked sausage mixture and shredded cheddar cheese. Toss lightly to distribute ingredients.
  3. In a large mixing bowl, whisk together the eggs, milk, heavy cream, dry mustard, salt, and pepper until well combined. Pour the liquid slowly and evenly over the bread and sausage layers.
  4. Preheat oven to 375°F (190°C). Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 20–25 minutes until the center is set and the top is golden brown. Garnish with fresh chives before serving.
