Ingredients:
- 1 can (400g) white beans, drained and rinsed
- 1 tablespoon olive oil (15ml)
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tablespoon tomato purée (15g)
- 1 teaspoon smoked paprika (2g)
- 1 teaspoon brown sugar (4g)
- 1 teaspoon mustard powder (2g)
- 1 can (400g) chopped tomatoes
- 2 tablespoons Worcestershire sauce (30ml)
- Salt and pepper to taste
- Optional: 1 teaspoon hot sauce for heat (5ml)
Instructions:
- If using dried beans, soak overnight and cook until tender. Drain and set aside.
- In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add tomato purée, smoked paprika, brown sugar, and mustard powder; stir well. Pour in chopped tomatoes and Worcestershire sauce. Season with salt and pepper.
- Stir in the cooked or canned beans, ensuring they're coated in the sauce. Bring to a gentle simmer; reduce heat to low and let cook uncovered for about 45 minutes, stirring occasionally.
- Taste and adjust seasoning as necessary. If desired, add hot sauce for a kick.
- Serve warm alone, on toast, or as a side with grilled meats.
