Ingredients:

  • 8 ounces (225g) fresh mozzarella cheese, sliced about ¼ inch (6mm) thick
  • 1/2 cup (packed) fresh basil leaves
  • 1/4 cup (60ml) extra virgin olive oil, good quality
  • 2 tablespoons (30ml) balsamic glaze
  • Sea salt and freshly ground black pepper to taste

Instructions:

  1. Gently wash and dry the tomatoes. Slice them into even, ¼ inch (6mm) thick slices.
  2. Slice the mozzarella into ¼ inch (6mm) thick slices, matching the thickness of the tomatoes.
  3. Arrange the tomato and mozzarella slices on a serving platter, alternating between a tomato slice, a mozzarella slice, and a basil leaf.
  4. Drizzle the Caprese salad generously with extra virgin olive oil.
