Ingredients:
- 4 large boneless, skinless chicken breasts (approximately 1.5 lbs or 680 grams)
- 4 slices of smoked ham (about 4 oz or 113 grams)
- 4 slices of Swiss cheese (about 4 oz or 113 grams)
- Salt and pepper to taste
- 1 cup all-purpose flour (120 g)
- 2 large eggs
- 1 cup breadcrumbs (preferably Panko) (100 g)
- 1 tsp paprika (optional)
- 1 tsp Italian seasoning (optional)
- 4 tbsp unsalted butter (56 g)
- 2 tbsp olive oil (30 ml)
Instructions:
- Place each chicken breast between plastic wrap and gently pound to 1/2-inch thickness. Season both sides with salt and pepper.
- Lay a slice of ham and a slice of cheese on each flattened chicken breast. Roll tightly, starting from one end, and secure with toothpicks if needed.
- Place flour in one shallow bowl, beaten eggs in another, and breadcrumbs mixed with paprika and Italian seasoning in a third.
- Dredge the chicken rolls in flour, dip in eggs, then coat with breadcrumbs, pressing gently to adhere.
- Place the breaded chicken rolls on a baking sheet and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C). In a skillet, heat butter and olive oil over medium heat. Sear the chicken rolls on each side until golden brown (about 3-4 minutes per side).
- Transfer rolls to the oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove from oven, let rest for 5 minutes, then slice and serve with your favorite sides.
