Ingredients:

  • 4 large boneless, skinless chicken breasts (approximately 1.5 lbs or 680 grams)
  • 4 slices of smoked ham (about 4 oz or 113 grams)
  • 4 slices of Swiss cheese (about 4 oz or 113 grams)
  • Salt and pepper to taste
  • 1 cup all-purpose flour (120 g)
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Panko) (100 g)
  • 1 tsp paprika (optional)
  • 1 tsp Italian seasoning (optional)
  • 4 tbsp unsalted butter (56 g)
  • 2 tbsp olive oil (30 ml)

Instructions:

  1. Place each chicken breast between plastic wrap and gently pound to 1/2-inch thickness. Season both sides with salt and pepper.
  2. Lay a slice of ham and a slice of cheese on each flattened chicken breast. Roll tightly, starting from one end, and secure with toothpicks if needed.
  3. Place flour in one shallow bowl, beaten eggs in another, and breadcrumbs mixed with paprika and Italian seasoning in a third.
  4. Dredge the chicken rolls in flour, dip in eggs, then coat with breadcrumbs, pressing gently to adhere.
  5. Place the breaded chicken rolls on a baking sheet and refrigerate for 30 minutes.
  6. Preheat the oven to 375°F (190°C). In a skillet, heat butter and olive oil over medium heat. Sear the chicken rolls on each side until golden brown (about 3-4 minutes per side).
  7. Transfer rolls to the oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Remove from oven, let rest for 5 minutes, then slice and serve with your favorite sides.
