Ingredients:
- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 cup (220g) packed light brown sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 3 cups (240g) old-fashioned rolled oats
- 1 cup (170g) raisins or chocolate chips (optional, your choice)
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicon mats.
- In a large bowl, beat softened butter with granulated and brown sugars until fluffy and light in color (about 2-3 minutes).
- Mix in eggs one at a time, then add vanilla extract until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture. Stir just until combined.
- Fold in the rolled oats and your choice of raisins or chocolate chips.
- Using a spoon or cookie scoop, place evenly sized mounds of dough (about 1.5 tablespoons) on prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until edges are golden brown and centers still look slightly soft.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
