Ingredients:

  • 1 cup mayonnaise (240g)
  • 16 oz sour cream (450g)
  • 1 package (1.4 oz / 40g) Knorr Vegetable recipe mix
  • 10 oz frozen chopped spinach, thawed and squeezed dry (284g)
  • 8 oz can water chestnuts, drained and finely chopped (225g)
  • 3 green onions, finely sliced

Instructions:

  1. Place the thawed spinach into a clean kitchen towel and squeeze tightly over the sink to remove all excess moisture until the spinach is a dry, compact ball.
  2. In a large mixing bowl, stir together the mayonnaise, sour cream, and the Knorr Vegetable recipe mix until well combined.
  3. Break apart the squeezed spinach and fold it into the creamy base along with the chopped water chestnuts and sliced green onions.
  4. Cover and refrigerate the dip for at least 2 hours to allow the dehydrated vegetables in the soup mix to fully rehydrate and the flavors to meld.
