Ingredients:

  • 1 cup cornmeal (yellow or white)
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk with 1 tablespoon vinegar)
  • 2 large eggs
  • 1/4 cup melted unsalted butter, plus extra for greasing the pan

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Grease the baking pan with butter or cooking spray to prevent sticking.
  3. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
  4. In a separate bowl, whisk together the buttermilk, eggs, and melted butter until smooth.
  5. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
  6. Pour the batter into the prepared pan, smoothing the top with a spatula.
  7. Place in the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for a few minutes before slicing into squares or wedges. Serve warm with butter.
