Ingredients:
- 1 cup cornmeal (yellow or white)
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk (or 1 cup milk with 1 tablespoon vinegar)
- 2 large eggs
- 1/4 cup melted unsalted butter, plus extra for greasing the pan
Instructions:
- Preheat your oven to 400°F (200°C).
- Grease the baking pan with butter or cooking spray to prevent sticking.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the buttermilk, eggs, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Place in the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before slicing into squares or wedges. Serve warm with butter.
