Ingredients:

  • 1 cup (225g) low-fat cottage cheese
  • 1 cup (125g) self-rising flour
  • 0.25 tsp fine sea salt
  • 1 large egg
  • 2 tbsp everything bagel seasoning

Instructions:

  1. Preheat your oven to 375°F (190°C). Place the cottage cheese into a blender or food processor and pulse until it reaches a completely smooth, velvety consistency.
  2. In a large bowl, whisk your self-rising flour and salt. Pour the smoothed cottage cheese into the center. Using a sturdy spatula, fold the ingredients together until a dough forms.
  3. Divide the dough into four equal portions. Roll each portion into a ball, then flatten into a disc about 1/2 inch thick.
  4. Use your thumb to poke a hole in the center of each disc and stretch it slightly. Ensure the hole is at least 1 inch wide.
  5. Beat the egg in a small bowl and brush generously over the tops of the dough rings. Sprinkle heavily with everything bagel seasoning. Press the seeds lightly into the dough.
  6. Bake for 20 minutes until the flagels are deep golden brown and have a firm, shattering crust.
