Ingredients:
- 1 cup (225g) low-fat cottage cheese
- 1 cup (125g) self-rising flour
- 0.25 tsp fine sea salt
- 1 large egg
- 2 tbsp everything bagel seasoning
Instructions:
- Preheat your oven to 375°F (190°C). Place the cottage cheese into a blender or food processor and pulse until it reaches a completely smooth, velvety consistency.
- In a large bowl, whisk your self-rising flour and salt. Pour the smoothed cottage cheese into the center. Using a sturdy spatula, fold the ingredients together until a dough forms.
- Divide the dough into four equal portions. Roll each portion into a ball, then flatten into a disc about 1/2 inch thick.
- Use your thumb to poke a hole in the center of each disc and stretch it slightly. Ensure the hole is at least 1 inch wide.
- Beat the egg in a small bowl and brush generously over the tops of the dough rings. Sprinkle heavily with everything bagel seasoning. Press the seeds lightly into the dough.
- Bake for 20 minutes until the flagels are deep golden brown and have a firm, shattering crust.
