Ingredients:
- 1 ½ cups all-purpose flour (180g)
- ½ cup unsalted butter, cold and cubed (113g)
- ¼ cup powdered sugar (30g)
- 1 large egg yolk
- 1-2 tablespoons cold water
- 1 cup mascarpone cheese (240g)
- ½ cup heavy cream (120ml)
- ⅓ cup granulated sugar (65g)
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- Mint leaves for garnish (optional)
Instructions:
- In a mixing bowl, combine flour, powdered sugar, and butter. Use a pastry cutter to mix until crumbly.
- Add the egg yolk and cold water. Mix until a dough forms. Shape into a disk, wrap in plastic wrap, and chill for 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface to fit the tart pan.
- Transfer dough to the pan, trim edges, and prick the bottom with a fork. Line with parchment paper and add baking beans. Bake for 20 minutes, then remove beans and bake for an additional 5-7 minutes until golden.
- In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla. Whip until soft peaks form, being careful not to over-whip.
- Once the tart shell has cooled, fill with the whipped mascarpone. Top generously with mixed berries.
- Chill the tart for at least 30 minutes before slicing. Garnish with mint leaves if desired and serve.
