Ingredients:

  • 1 ½ cups all-purpose flour (180g)
  • ½ cup unsalted butter, cold and cubed (113g)
  • ¼ cup powdered sugar (30g)
  • 1 large egg yolk
  • 1-2 tablespoons cold water
  • 1 cup mascarpone cheese (240g)
  • ½ cup heavy cream (120ml)
  • ⅓ cup granulated sugar (65g)
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • Mint leaves for garnish (optional)

Instructions:

  1. In a mixing bowl, combine flour, powdered sugar, and butter. Use a pastry cutter to mix until crumbly.
  2. Add the egg yolk and cold water. Mix until a dough forms. Shape into a disk, wrap in plastic wrap, and chill for 30 minutes.
  3. Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface to fit the tart pan.
  4. Transfer dough to the pan, trim edges, and prick the bottom with a fork. Line with parchment paper and add baking beans. Bake for 20 minutes, then remove beans and bake for an additional 5-7 minutes until golden.
  5. In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla. Whip until soft peaks form, being careful not to over-whip.
  6. Once the tart shell has cooled, fill with the whipped mascarpone. Top generously with mixed berries.
  7. Chill the tart for at least 30 minutes before slicing. Garnish with mint leaves if desired and serve.
