Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh broccoli florets
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream or coconut milk
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion; sauté until translucent (about 5 minutes).
  3. Stir in minced garlic; cook for 1 minute until fragrant.
  4. Add broccoli florets and broth to the pot.
  5. Bring to a boil; reduce heat and simmer for 10-12 minutes, or until the broccoli is tender.
  6. Remove the pot from heat and puree the soup until smooth.
  7. Return the soup to low heat; stir in heavy cream or coconut milk.
  8. Season with salt and pepper to taste; heat through for about 2-3 minutes.
  9. Ladle the soup into bowls and enjoy!
