Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh broccoli florets
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream or coconut milk
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion; sauté until translucent (about 5 minutes).
- Stir in minced garlic; cook for 1 minute until fragrant.
- Add broccoli florets and broth to the pot.
- Bring to a boil; reduce heat and simmer for 10-12 minutes, or until the broccoli is tender.
- Remove the pot from heat and puree the soup until smooth.
- Return the soup to low heat; stir in heavy cream or coconut milk.
- Season with salt and pepper to taste; heat through for about 2-3 minutes.
- Ladle the soup into bowls and enjoy!
