Ingredients:
- 1 cup (150g) raw cashews, soaked in water for at least 2 hours
- 1 cup (240ml) vegetable broth
- 2 tablespoons nutritional yeast
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Optional: 1/4 teaspoon nutmeg
Instructions:
- Soak the cashews in water for at least 2 hours, then drain and rinse.
- In a high-speed blender or food processor, combine the soaked cashews, vegetable broth, nutritional yeast, olive oil, minced garlic, lemon juice, salt, pepper, and nutmeg. Blend until smooth and creamy.
- Transfer the blended sauce to a small saucepan over low heat. Stir gently to warm through, about 5-7 minutes, avoiding boiling.
- Taste the sauce and adjust seasoning with salt, pepper, or lemon juice as desired.
- Serve immediately over your favorite pasta or sautéed vegetables.
