Ingredients:

  • 1 cup (150g) raw cashews, soaked in water for at least 2 hours
  • 1 cup (240ml) vegetable broth
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon nutmeg

Instructions:

  1. Soak the cashews in water for at least 2 hours, then drain and rinse.
  2. In a high-speed blender or food processor, combine the soaked cashews, vegetable broth, nutritional yeast, olive oil, minced garlic, lemon juice, salt, pepper, and nutmeg. Blend until smooth and creamy.
  3. Transfer the blended sauce to a small saucepan over low heat. Stir gently to warm through, about 5-7 minutes, avoiding boiling.
  4. Taste the sauce and adjust seasoning with salt, pepper, or lemon juice as desired.
  5. Serve immediately over your favorite pasta or sautéed vegetables.
