Ingredients:

  • 2 cups (280g) sweet corn (fresh, frozen, or canned, drained)
  • 8 oz (225g) cream cheese, softened
  • 1 cup (240ml) sour cream
  • 1 cup (120g) shredded cheddar cheese
  • 1/2 cup (75g) chopped red bell pepper
  • 1/2 cup (75g) chopped green onions (scallions)
  • 1-2 jalapeños, finely chopped (adjust based on heat preference)
  • 1 teaspoon (5g) garlic powder
  • 1 tablespoon (15ml) lime juice
  • Salt & pepper to taste

Instructions:

  1. Chop the red bell pepper, green onions, and jalapeños as directed.
  2. In a mixing bowl, combine softened cream cheese, sour cream, and lime juice until smooth.
  3. Gently fold in corn, bell pepper, green onions, jalapeños, garlic powder, salt, and pepper.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow flavours to meld.
  6. Transfer to a serving bowl and garnish with extra green onions or cheese as desired.
