Ingredients:
- 2 cups (280g) sweet corn (fresh, frozen, or canned, drained)
- 8 oz (225g) cream cheese, softened
- 1 cup (240ml) sour cream
- 1 cup (120g) shredded cheddar cheese
- 1/2 cup (75g) chopped red bell pepper
- 1/2 cup (75g) chopped green onions (scallions)
- 1-2 jalapeños, finely chopped (adjust based on heat preference)
- 1 teaspoon (5g) garlic powder
- 1 tablespoon (15ml) lime juice
- Salt & pepper to taste
Instructions:
- Chop the red bell pepper, green onions, and jalapeños as directed.
- In a mixing bowl, combine softened cream cheese, sour cream, and lime juice until smooth.
- Gently fold in corn, bell pepper, green onions, jalapeños, garlic powder, salt, and pepper.
- Stir in the shredded cheddar cheese until evenly distributed.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavours to meld.
- Transfer to a serving bowl and garnish with extra green onions or cheese as desired.
