Ingredients:

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1 cup chicken or vegetable broth (low-sodium preferred)
  • 1/2 cup whole milk or cream
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • 2 cloves garlic, minced (optional)
  • Fresh chives or parsley, for garnish (optional)

Instructions:

  1. Peel and cube the Yukon Gold potatoes into uniform pieces (about 1-inch cubes).
  2. Place cubed potatoes into the Instant Pot. Pour in the broth and add minced garlic (if using).
  3. Seal the Instant Pot lid. Set to high pressure for 8 minutes. Allow for a natural pressure release for 10 minutes, then quick release any remaining steam.
  4. Carefully remove the lid. Drain any excess liquid if needed. Add butter, milk/cream, salt, and pepper. Mash until desired creaminess is achieved.
  5. Taste and adjust seasoning if necessary. Garnish with fresh herbs if desired. Serve warm.
