Ingredients:
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 1 cup chicken or vegetable broth (low-sodium preferred)
- 1/2 cup whole milk or cream
- 4 tablespoons unsalted butter
- Salt and pepper to taste
- 2 cloves garlic, minced (optional)
- Fresh chives or parsley, for garnish (optional)
Instructions:
- Peel and cube the Yukon Gold potatoes into uniform pieces (about 1-inch cubes).
- Place cubed potatoes into the Instant Pot. Pour in the broth and add minced garlic (if using).
- Seal the Instant Pot lid. Set to high pressure for 8 minutes. Allow for a natural pressure release for 10 minutes, then quick release any remaining steam.
- Carefully remove the lid. Drain any excess liquid if needed. Add butter, milk/cream, salt, and pepper. Mash until desired creaminess is achieved.
- Taste and adjust seasoning if necessary. Garnish with fresh herbs if desired. Serve warm.
