Ingredients:

  • 1 pound (454g) Velveeta cheese, cut into 1/2-inch cubes
  • 1 (10 ounce / 283g) can Rotel diced tomatoes and green chilies, undrained
  • 1/2 pound (227g) ground beef, cooked and drained
  • 1/4 cup (30g) chopped cilantro, for garnish (optional)

Instructions:

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. In a medium saucepan or slow cooker, combine the cubed Velveeta cheese, Rotel (undrained), and cooked ground beef.
  3. If using a saucepan, cook over medium-low heat, stirring constantly, until the cheese is completely melted and the mixture is smooth. If using a slow cooker, cook on low for 1-2 hours, stirring occasionally, until melted and smooth.
  4. Remove from heat (or turn slow cooker to 'warm'). Garnish with chopped cilantro (optional). Serve immediately with tortilla chips.
