Ingredients:
- 2 lbs Yukon Gold potatoes, peeled and cut into chunks
- 4 oz cream cheese, at room temperature
- ½ cup whole milk (or more for desired consistency)
- 4 tbsp unsalted butter
- 2 cloves garlic, minced (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped fresh chives or parsley (optional)
Instructions:
- Bring a large pot of salted water to a boil.
- Add potato chunks and cook until fork-tender, about 20 minutes.
- Drain potatoes and return them to the pot; allow them to steam dry for a couple of minutes.
- Use a potato masher or ricer to mash the potatoes until smooth.
- In a mixing bowl, combine the cream cheese, butter, and minced garlic (if using).
- Gradually add the warm mashed potatoes, mixing until well combined.
- Pour in the milk while continuing to mix until you reach your desired creamy consistency.
- Taste and adjust seasoning with salt and freshly ground black pepper.
- Transfer to a serving bowl, garnish with chopped chives or parsley if desired, and enjoy!
