Ingredients:

  • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 4 oz cream cheese, at room temperature
  • ½ cup whole milk (or more for desired consistency)
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh chives or parsley (optional)

Instructions:

  1. Bring a large pot of salted water to a boil.
  2. Add potato chunks and cook until fork-tender, about 20 minutes.
  3. Drain potatoes and return them to the pot; allow them to steam dry for a couple of minutes.
  4. Use a potato masher or ricer to mash the potatoes until smooth.
  5. In a mixing bowl, combine the cream cheese, butter, and minced garlic (if using).
  6. Gradually add the warm mashed potatoes, mixing until well combined.
  7. Pour in the milk while continuing to mix until you reach your desired creamy consistency.
  8. Taste and adjust seasoning with salt and freshly ground black pepper.
  9. Transfer to a serving bowl, garnish with chopped chives or parsley if desired, and enjoy!
