Ingredients:
- 1 large English Cucumber (approx. 400g), thinly sliced
- 1 bunch Red Radishes (approx. 100g), topped and sliced into rounds
- 0.25 small Red Onion (approx. 30g), shaved into half-moons
- 3 tbsp Fresh Dill, roughly chopped
- 3 tbsp Rice Vinegar
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Maple Syrup
- 0.5 tsp Sea Salt
- 0.5 tsp Cracked Black Pepper
- 1 pinch Red Pepper Flakes
Instructions:
- Toss the sliced cucumbers and radishes in a colander set over a bowl. Sprinkle with salt and toss lightly. Let sit for 10 minutes to draw out excess moisture.
- Pat the cucumbers and radishes thoroughly dry with a clean kitchen towel or paper towel.
- In a small mason jar or bowl, combine the rice vinegar, olive oil, maple syrup, salt, and pepper. Shake or whisk vigorously until emulsified.
- In a large mixing bowl, combine the dried cucumbers, sliced radishes, shaved red onion, and chopped dill.
- Pour the dressing over the vegetables and toss gently to ensure even coating. Serve immediately or chill for up to one hour.
