Ingredients:
- 16 oz frozen sweet peas, thawed and patted dry
- 1 head Iceberg or Romaine lettuce, chopped
- 8 slices thick-cut bacon, cooked until crispy and crumbled
- 1 cup sharp cheddar cheese, small cubes or thick shreds
- 1/2 cup red onion, finely diced
- 1/2 cup celery, diced
- 1 cup real mayonnaise
- 1/4 cup sour cream
- 2 tbsp granulated sugar
- 1 tbsp apple cider vinegar
- 1/2 tsp smoked paprika
- Salt and freshly cracked black pepper to taste
Instructions:
- Thaw frozen peas completely and pat dry with paper towels to remove excess moisture. Fry the thick-cut bacon in a skillet over medium heat until crispy, then drain on paper towels and crumble into bite-sized pieces.
- In a small mixing bowl, whisk together the mayonnaise, sour cream, sugar, apple cider vinegar, and smoked paprika until the sugar dissolves and the dressing is smooth. Season with salt and pepper to taste.
- In a large bowl, layer the chopped lettuce, dried peas, diced red onions, celery, and cheddar cheese. Pour the dressing over the top and fold gently with a spatula until evenly coated. Fold in the crumbled bacon last and refrigerate for at least 30 minutes before serving.
