Ingredients:

  • 1 medium kohlrabi, peeled and julienned
  • 2 medium carrots, peeled and shredded
  • 1 cup purple cabbage, shredded
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, chopped
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions:

  1. Peel and julienne the kohlrabi, shred the carrots, shred the purple cabbage, and chop the parsley and green onions.
  2. In a mixing bowl, whisk together apple cider vinegar, olive oil, maple syrup, and Dijon mustard until fully combined. Season with salt and black pepper.
  3. In a large bowl, toss together the kohlrabi, carrots, purple cabbage, parsley, and green onions. Drizzle the dressing over the slaw.
  4. Use tongs or your hands to evenly coat the vegetables with the dressing.
  5. Allow the slaw to sit for at least 10 minutes before serving to meld flavors.
