Ingredients:
- 1 medium kohlrabi, peeled and julienned
- 2 medium carrots, peeled and shredded
- 1 cup purple cabbage, shredded
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 3 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon maple syrup or honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions:
- Peel and julienne the kohlrabi, shred the carrots, shred the purple cabbage, and chop the parsley and green onions.
- In a mixing bowl, whisk together apple cider vinegar, olive oil, maple syrup, and Dijon mustard until fully combined. Season with salt and black pepper.
- In a large bowl, toss together the kohlrabi, carrots, purple cabbage, parsley, and green onions. Drizzle the dressing over the slaw.
- Use tongs or your hands to evenly coat the vegetables with the dressing.
- Allow the slaw to sit for at least 10 minutes before serving to meld flavors.
