Ingredients:

  • 1 cup (120g) all-purpose gluten-free flour (or substitute with oat flour or almond flour)
  • 1/2 cup (60g) cornstarch (for crispiness)
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (2g) salt
  • 2 tbsp (30g) sugar (optional, adjust to taste)
  • 1 large egg
  • 1 cup (240ml) milk (or plant-based milk for dairy-free option)
  • 2 tbsp (30ml) vegetable oil or melted coconut oil
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat the waffle iron according to the manufacturers instructions.
  2. In a mixing bowl, combine dry ingredients: gluten-free flour, cornstarch, baking powder, salt, and sugar. Whisk to blend.
  3. In another bowl, whisk together the wet ingredients: egg, milk, vegetable oil, and vanilla extract.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Avoid overmixing.
  5. Lightly grease the preheated waffle iron with oil.
  6. Pour an appropriate amount of batter onto the iron (about 1/2 cup or according to iron size) and close.
  7. Cook until the waffles are golden brown and crispy (follow your irons timing, usually 5-7 minutes).
  8. Repeat with remaining batter.
  9. Serve warm with toppings of your choice.
