Instructions:
- Preheat the waffle iron according to the manufacturers instructions.
- In a mixing bowl, combine dry ingredients: gluten-free flour, cornstarch, baking powder, salt, and sugar. Whisk to blend.
- In another bowl, whisk together the wet ingredients: egg, milk, vegetable oil, and vanilla extract.
- Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Avoid overmixing.
- Lightly grease the preheated waffle iron with oil.
- Pour an appropriate amount of batter onto the iron (about 1/2 cup or according to iron size) and close.
