Ingredients:
- 1 lb lean ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 3 large bell peppers (red, green, and yellow), chopped into 1-inch pieces
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth, low sodium
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 2 cups cooked white rice
- 1/2 cup fresh parsley, chopped
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
- Stir in the minced garlic for the final 60 seconds until fragrant. Drain excess fat, then transfer the entire mixture into the crockpot.
- Stir in the chopped bell peppers, fire-roasted tomatoes, tomato sauce, beef broth, oregano, and smoked paprika.
- Secure the lid and set to Low for 7-8 hours or High for 3-4 hours until peppers are tender.
- Stir in the cooked rice and fresh parsley. Let the soup sit on the Warm setting for 15–20 minutes before serving.
