Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (15g) baking powder
  • 1/2 teaspoon (2.5g) salt
  • 1 large egg
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips
  • Maple syrup
  • Fresh berries (optional)
  • Whipped cream (optional)

Instructions:

  1. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Gently fold the chocolate chips into the batter.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  6. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Carefully flip the pancakes and cook for another 1-2 minutes until golden brown.
  8. Serve immediately with syrup, berries, and whipped cream if desired.
