Ingredients:
- 1 cup (125g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 tablespoon (15g) baking powder
- 1/2 teaspoon (2.5g) salt
- 1 large egg
- 1 cup (240ml) milk (dairy or non-dairy)
- 2 tablespoons (30g) unsalted butter, melted
- 1 teaspoon (5ml) vanilla extract
- 1 cup (175g) semi-sweet chocolate chips
- Maple syrup
- Fresh berries (optional)
- Whipped cream (optional)
Instructions:
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Gently fold the chocolate chips into the batter.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
- Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
- Carefully flip the pancakes and cook for another 1-2 minutes until golden brown.
- Serve immediately with syrup, berries, and whipped cream if desired.
