- 200g dark chocolate (70% cocoa), chopped
- 2 tablespoons unsalted butter
- 2 large egg whites
- 2 tablespoons granulated sugar
- 240ml heavy cream
- 1 teaspoon vanilla extract

Instructions:
- In a heatproof bowl, combine chopped chocolate and butter. Melt over a double boiler or microwave in short intervals until smooth. Stir occasionally.
- In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Set aside.
- In a clean bowl, beat the egg whites until foamy, then gradually add sugar while continuing to whip until stiff peaks form.
- Gently fold the melted chocolate into the whipped cream until blended. Then carefully fold in the whipped egg whites, ensuring not to deflate the mixture.
- Spoon the mousse into serving dishes or ramekins. Cover and chill in the refrigerator for at least 2 hours until set.
