Ingredients:

  • 200g dark chocolate (70% cocoa), chopped
  • 2 tablespoons unsalted butter
  • 2 large egg whites
  • 2 tablespoons granulated sugar
  • 240ml heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream (optional)

  • Fresh berries (optional)

Instructions:

  1. In a heatproof bowl, combine chopped chocolate and butter. Melt over a double boiler or microwave in short intervals until smooth. Stir occasionally.
  2. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Set aside.
  3. In a clean bowl, beat the egg whites until foamy, then gradually add sugar while continuing to whip until stiff peaks form.
  4. Gently fold the melted chocolate into the whipped cream until blended. Then carefully fold in the whipped egg whites, ensuring not to deflate the mixture.
  5. Spoon the mousse into serving dishes or ramekins. Cover and chill in the refrigerator for at least 2 hours until set.
