Ingredients:
- 1 cup (225g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red gel food coloring
- 1 cup (125g) all-purpose flour
- 1/2 cup (50g) unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 4 oz (113g) cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan or line with parchment paper.
- In a large bowl, melt the butter. Whisk in the granulated sugar and brown sugar until combined.
- Add in the eggs, vanilla extract, and red gel food coloring; mix until smooth.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt; fold into the wet ingredients until just combined.
- In a mixing bowl, combine the softened cream cheese, granulated sugar, egg yolk, and vanilla extract; beat until smooth and creamy.
- Pour half of the brownie batter into the prepared baking pan, followed by dollops of the cream cheese mixture. Use a knife to swirl.
- Pour the remaining brownie batter on top and swirl again.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out with moist crumbs.
- Allow brownies to cool in the pan for at least 15 minutes before slicing into squares.
